Ube Cream Cheese Filling

From Ube cream cheese filling
I am making a separate post for this because I used this not only for my (failed) ube cake attempt, but also because it made my basic ube haleya very yummy. So I figured it has earned itself a separate post. Also, I am still gonna experiment again with ube cake, which will have its separate post once I have found a satisfactory recipe for it (and I will try not to deviate too much from those recipes available online).

Ingredients:
8-oz cream cheese, softened
1 stick butter, softened
1-2 cups confectioner's sugar
1/2 cup ube haleya
1 tsp pandan essence (clear-colored)
10-15 (or more) drops of purple coloring [optional - you might like the contrast of colors]

Method:

Very easy. Blend well all ingredients. Add food coloring as desired, then beat some more. Use as filling for your ube roll (can also be used as frosting, but this is very sticky if you will wrap in cling wrap and put in the fridge. Better to use buttercream frosting for the purpose as it does not cling to plastic after refrigeration).

I have been looking for a good ube cake and could not find one. Do you have a recipe for that? I always google it but ube pandan or ube pandan macapuno always comes up and It's really hard for me to get pandan around here so I'm just looking for the ube cake,

Hi Jin,
I do have it: ube cake roll but be warned that it is nothing like goldilocks or red ribbon. Very good per my palate nonetheless. :)

Hi Anonymous,
Welcome to my site and thank you for your comment! I hope you will enjoy many recipes here. I am busy reviewing for a major exam that will probably cover about 1-2 years, so I will not be posting too often, but I do hope I have enough in my database to keep you busy for a while. :)

Hi Anonymous,
That's the spirit! Try and try until you succeed. Just try to review what you did and try to troubleshoot...see where you went wrong.
The recipe above for filling is the same one I used for frosting.

Hi manang, I really loved ube cake. but can I used ube powder instead of halaya? pls. reply. I've tried ur super soft ensaymada and super sarap po ng result. Thank you and God Bless.

Anonymous, Yes you can use the powder. Prepare it as halaya first before using in this recipe. I have used ube powder to make halaya before, and while I did not like it as halaya, it was ok once mixed with cake batter (for this) or with vanilla ice cream (for ube ice cream).
