This is one of my hubby's quick lunch or supper when I am not in the mood to cook anything fancy...
Open a can of tuna in brine, add some mayonnaise (1-2 tbsp), a dash of pepper, then top with several baby spinach leaves.
I like mine with a squirt of lemon juice (according to taste) and some bits of chopped onion, mixed together well. I add salt to taste also.
We like toasting the bread. But when katam strikes, we don't.

i got hooked on a tuna melt that i used to have for lunch when i was living in the suburbs of ct. everyone at work tried to figure out what the components of the tuna salad was because it was so incredibly yummy but failed. finally, i thought of telling the counterperson at the deli which made the much sought after sandwich that i have terrible allergies and i need to know each and every ingredient of the food i consume. we were able to nail it to bread crumbs and indeed after kitchen testing the darned salad with the use of freshly made bread crumbs, it turned out to be exactly similar to the deli's. with the crumbs, the consistency and the taste is so much better.

I myself is a tuna eating pinoy. Oh, for health reason. I started taking it to control my calorie and fat intake due to my diabetes. My recipe is the following tuna, mayo and pickle relish. The proportion? I don't know and it doesn't matter. Just mix it to your taste. Then, I use 100% wheat bread. Now, I see from your recipe you added a nice touch and that is pieces of spinach, hmmmmmmmm. And pepper? You like bits of spices? I will try that, too. And other condiments. You gave some ideas.
Bon apetit or whatever its equivalent in tagalog.
